Raw Peppermint Slice

This "no bake" recipe can be keto or just low carb


Base - 1.5 cups desiccated coconut

1 cup blanched almond

1/2 cup coconut oil

1 TBS raw cacao

1 tsp vanilla powder or paste

Filling - 1.5 cups cashew nuts

1/2 cup desiccated coconut

pinch salt

1/4 cup coconut cream

2-5 drops food grade peppermint essential oil

Topping - 100g 85-90% dark chocolate


Blend all the base ingredients until it comes together and resembles a crumble. Put base into a prepared loaf tin and press down firmly. Refrigerate or freeze while you make the filling

Blend all ingredients until smooth and pour over the base layer. Return to fridge or freezer

Melt the chocolate over a double boiler until fully melted then pour over the filling layer.

Put it back in the fridge to set
